HOMEMADE CHOWDERS & STEWS Our offerings of Maine Seafood Chowders and Stews are the ones of which David Rosengarten exclaimed that he was "so excited about" in his "In Food Today" show on the TV Food Network. We agree wholeheartedly! We think you will, too. First off, the ingredients are fresh. Then, both the chowders and stews are carefully prepared in a real Mt. Desert Island kitchen according to true Maine methods. They are frozen promptly, and shipped directly to you. That's as fresh as you can get, unless you're in Maine doing it yourself! Keep frozen until ready to thaw and prepare. Preparation is a snap: whether a chowder or a stew, gently thaw by placing the covered container in the refrigerator (for a slow thaw) or on the kitchen counter (for a quicker thaw). Empty thawed contents into a pot. Heat to just a boil, then remove from heat. Next, some prefer to dilute their chowder by using a milk product; fill 1/2 the container with either whole, skim, cream, half 'n half, or evaporated milk. Stews are never diluted unless you absolutely must, and then only with cream. Once diluted, heat gently again to eating temperature, but never boil. Serve, and enjoy the finest Maine seafood chowder or stew you've ever had -- we guarantee it. By adding a half more milk product: 1 pint yields 2 - 3 servings. CLAM CHOWDER - steamer clams, chopped clams, potatoes, onion, salt pork, spices, and margarine. By adding a half more milk product: 1 pint yields 2 - 3 servings. LOBSTER STEW - lobster meat (1/2 lb), cream, butter, sherry, and spices. 1 pint yields 1 to 1 1/2 servings -- undiluted.
